Escudella. It is a spoon dish made with seasonal vegetables and pork. A traditional dish that is usually served in winter and at popular events.
El mountain trinxat of Mountain is a traditional dish of the Pyrenees made from winter cabbage, potatoes, garlic and bacon.
Andorran Cannelloni. They are a variant of the Catalan recipe that mixes lamb, pork and chicken meat in a few rolls of pasta accompanied by bechamel.
Bush meat. It is integrated into some dishes that you will find at the beginning of the hunting season, such as the civet de hare or wild boar. It is usually served in stew with vegetables and mushrooms. And with the arrival of fishing season, you can taste the Andorran trout, sautéed with almonds and ham.
Cod. It used to be a main dish, such as herring or conger, fish that reached mountain areas thanks to its salt-based preservation. Today you can taste the cod au gratin with aioli, being the most traditional way to eat it.
